Temperatures of hot held sauces were measured to be above 140 degrees. Education was given on the proper procedure for removing disposable gloves along with maintaining a schedule of washing, rinsing, and sanitizing all work surfaces, equipment, and cooking utensils every four hours. In the absence of a mop sink, all waste water must be disposed of in the restroom toilet. |
