  • Observed employee handling food without effective hair restraint. Per manager, the employee was late for work this morning and forgot his hat. Per manager, the employee always wears a hat. All employees must wear effective hair restraints when handling food.
  • Observed cutting board on back prep table with deep abrasions and discoloration on both sides. When cutting boards become damaged and discolored, the cutting board cannot be properly cleaned and sanitized. Repair or replace.
  • Observed large amounts of ice on floor, walls, doors, and ceiling of the walk-in freezer. Per manager, they defrosted it in recent months but the problems persists. Defrost freezer to remove ice as routinely as necessary or repair walk-in freezer to remove the issue.
  • Observed large build up of debris inside of the cabinets in the customer service area. Clean as routinely as necessary. Observed build up lime and debris on outside of ice machine. Clean as routinely as necessary.
  • Observed damaged soda cans, energy drinks, and cups stored on side and inside of the handsinks located in back and by three compartment sink. Hand sinks must be accessible to employees at all times and only be used for hand washing. Manager removed all items from the hand sink during inspection. This violation is a repeat violation from the previous inspection. Provide TCHD with signed training documentation from all employees about hand sink policy or provide signage that signifies hand sinks must accessible and only used for hand washing by 1/15/16.
  • Observed build up of debris on floor throughout walk-in cooler. Clean as routinely as necessary.
  • Observed extensive damage on wall near the mop service sink. The FRP material does not extend all the way up the wall and the moisture from air drying the mops causes water damage to dry wall. Repair or replace with an approved material to prevent further damage.

  • Observed employee improperly wash their hands. Employee touched the handle with barehand. Do a training with all employees on proper hand washing techniques. I will leave copies of TCHD's hand hygiene flyer. Submit documentation to me by 08-05-2015.
  • Observed white and black buildup on the ice machine drip tray. Wash, rinse, and sanitize on a routine basis throughout the day.
  • The inside of the microwave has a lot of food debris inside. Wash, rinse, and sanitize inside of microwave on a routine basis throughout the day.
  • All non-food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. These surfaces include but are not limited to the inside panel of the milkshake machine, the counter, and the outside of the soda machine.
  • Both handsinks were blocked. The handsink in the kitchen/prep area had a large box in front of it. Box was moved. The handsink in the back area near the 3-compartment sink had items in front of it. Never store items in front of handsinks.
  • Observed build up on floors especially near equipment and in corners. Clean the floors.
  • Soda syrup splash on wall behind soda dispenser rack. Clean the wall.

  • Observed employee in the kitchen area moving items in the pizza ingredient cooler with no hair restraint. Always wear hair restraints in prep area.
  • All food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. This includes but is not limited to the ice machine drip tray.
  • All food contact surfaces used for cooking need to be washed, rinsed, and sanitized on a daily basis. These surfaces include but are not limited to the inside of the customer microwave.
  • All non-food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. These surfaces include but are not limited to the outside of the milkshake cooler, the back of the soda dispenser, the inside of the milkshake mixer door, and the reach in and walk in cooler/freezer door seals.
  • Build up on floors especially under equipment such as 3-compartment and handsinks. Clean the floors.
  • Build up on wall behind 3-compartment sink. Clean the wall.
  • Observed employee coat in a box in the prep area. Suggest installing coat hooks for employees.

Questions about BECK'S:

Yes I would like to know what the foul smell is coming from the restroom in the slot area. When you try to use the sink water in that restroom a very foul smelling odor comes from the faucet and if you wash your hands with the water your hands have the same foul smell as the water coming out of the faucet and it doesn't get off of your hands very quickly. I know when I use that restroom I do not use the sink water and I suggest no one else does as well.
