All potentially hazardous foods, once removed from the original packaging, must labeled with the 7 day date label to prevent the growth of pathogens. Employee discarded the hot dogs during inspection. Items that are for employees only must be labeled as such and stored separate from other foods.
Observed employee serving food without proper hair restraint. Employees serving food must wear an effective hair restraint (hat, hairnet) to prevent the touching of the scalp during food preparation.
Observed chipping paint and rust forming on shelf of steel table that holds the hot dog steamer. Paint, seal, or replace to allow for proper cleaning.

Observed a clear spray bottle on the chemical shelf in the back room without a label. All chemicals used in the facility must be labeled in accordance of the law to prevent misuse of the product. The employee separated the product away from the rest until it can be properly labeled.
No food handler certifications were present. Per employee, she would like dates of the FSSMC certification courses to become properly certified. All employees must be food handler certified or have FSSMC within 30 days of hire. Provide TCHD with documentation of the certifications by 2/25/16.
