- There are racks that have missing paint and as a result are starting to rust. Repaint the rusty and chipped wire racks and shelves in the grill line coolers.
- The caulk around the dish machine drain boards is black and missing in places. Replace the caulking.
- Observed buildup in reach in cooler handles. There is food debris in areas outside the cooler on the prep line such as in hinges and outside of handles. There is a lot of buildup on the outside of the control boxes on the prep line. There was an accumulation of water at the bottom of the reach in cooler with drinks which was also dripping onto the floor. It was wiped out.
- There are loose floor tiles under the fryer. There is water collecting underneath.
- There is some food splatter on the walls especially behind equipment such as the hot holding wells.

- The floors had a build up of debris under and around equipment. Clean the floors.

- Cool down labels were off by about 8 hours for today. The manager showed us how much time the printer was off by printing labels at the time of the inspection. New labels were immediately printed for all food in the walk in cooler that was cooled down today.
- Found shredded chicken and grilled peppers and onions in the grill prep cooler at 44F and 45F. Cold food must be held at 41F or below. These foods were voluntarily discarded.
- Found scoops in the prep coolers on the grill line with the handles down in the food. Store scoops with the handles out of the food to prevent contamination.
- Observed an employee wash her hands and turn off the the faucet with her clean hands, recontaminating her hands. The faucet must be turned off with a paper towel after hand washing. Retrain employees on proper hand washing and personal hygiene and submit documentation to TCHD, Attn: Kim by 7-27-15.
- The canned good shelves near the walk-in freezer were rusting. Repaint or repair them.
- The prep coolers on the grill line had a build up of food debris inside them. Clean and sanitize them.
- One paper towel dispenser in each restroom was not functioning. Repair them.
- Found build-up of debris on floors. Clean the floors throughout kitchen and walk in coolers.

- Found mac n cheese, smoked potatoes, ranch at 48F in the bottom of the taco fry line cooler. These foods were discarded by the cook. Contact someone to repair the unit and do not store food in the bottom of this unit until it is repaired and maintaining food at or below 41F. Contact TCHD for a re-inspection when fixed.
- Found a gallon of milk in the waitstaff cooler being used to serve milk to customers.
- Observed cook working with open wounds on his arms. Inspector discussed that these wounds (grease burns) must be covered with bandages and long sleeves until healed. Manager will discuss and enforce this policy.
- The shelves in the storage shed were bare wood. Paint or seal them so they are easily cleanable.
- The prep line coolers had a build up of food debris. Clean and sanitize them.
- The grills, fryers had a build up of food debris. Clean and sanitize these areas.
- Found build-up of debris on floors. Clean the floors.

- Non food contact surface cleaning: Clean the outside of the chip holder, dust the shelf above the pass through window, clean as needed.
- Found hand sink at the bar missing the goose neck faucet. Fix sink. Inspector will follow up in ten days.
- Please dust the ceiling and the mixers in the walk in beer cooler.
