  • Found various cheeses on the top shelves of the cheese/sandwich/salad island display cooler at 53-56F. Maintain cold foods at 41F or below. Repairman was already at the facility. Spoke with him and he stated that this cooler was turned off to repair it. All food that was above 41F was discarded by manager. All food that was 41 F or below was immediately moved into another cooler. Do not use this unit until it has been repaired and is maintaining food at 41F or below. Contact Kim at TCHD for a re-inspection when it has been repaired.
  • Repair or replace the broken door seal to the walk in freezer in the deli. Repair the small hole in the bakery walk in freezer door seal. Repaint the chipped shelves in the bakery walk in freezer.
  • The clean utensil drawer in the bakery had a build up of food debris. Clean and sanitize it.
  • The door seal to the bakery walk in cooler had debris build up. Clean and sanitize it.
  • The bakery floor in the doughnut making area had a build up of debris and the floor outside of the deli walk in freezer had a build up of water. Clean these floors.

  • The wire shelves in the bakery walk-in freezer and cooler and the bottom of the deli meat display cases were rusty and chipping paint. Repaint them so they are easily cleanable.
  • Repair the leaky faucet at the 3-compartment sink in the deli area.
  • Found build-up of debris on floors. Clean the floors under and around equipment and under the doughnut case.
