- Observed employee packaging meat salad while wearing single use gloves, then came to help read sanitizer label, touched the chemical container, then rubbed hands on their pants before returning to same task. Employees shall replace single use glove when changing tasks, when their task is interrupted, or when gloves are damaged or otherwise soiled. Discussed this with manager and employee.
- After washing and rinsing, observed employee dip metal container in sanitizer then remove it immediately for it to air dry. All equipment and utensils shall be fully submerged in sanitizer for at least 60 seconds to effectively sanitize. Discussed this with employee; employee re-sanitized container.
- Observed several soiled deli plates and trays being stored as clean on equipment storage shelf. Employee voluntarily removed plates to re-wash, rinse, and sanitize them. Ensure all plates and trays are wash, rinsed, sanitized, and properly air dried before being stored.
- Rear handsink in hallway between deli and bakery was blocked by chemical container and brooms. Ensure handsinks remain clear and accessible at all times. Employee removed brooms and cleared pathway to handsink.

- Observed a container of uncovered pink sprinkles in the bakery cabinet. Food must be covered during storage to prevent contamination.
- Found bags of tortilla chips and pretzel chips stored next the mop sink in the deli. Move chips away from mop sink.
- Found boxes of food stored on the floor under shelves in the walk in freezer in the bakery.
- QUAT sanitizer in the deli 3-compartment sink was at less than 100 ppm. QUAT sanitizer must be maintained at 150-400 ppm. Corrected to 200 ppm.
- The icing shelf in the bakery and metal racks in the walk in cooler in the bakery had a build up of food debris on them. Clean and sanitize them.
- The outsides of the plastic drawers in the bakery, stainless cabinet door tracks in the bakery, outside and back of the microwave in the bakery had a build up of food debris. Clean and sanitize these areas.
- The deli hand sink is right up against the sanitize side of the 3-compartment sink. Provide a splash guard to prevent splash onto clean dishes.
- No paper towels were at the bakery hand sink. Paper towels must be provided at all hand sinks. Corrected--The dispenser was refilled.
- The floors under the fryers in the deli and in the bakery under and around equipment had a build up of debris. Clean the floors.

- Found a opened bottle of Sprite in a cabinet in the bakery next to single service containers. Corrected--It was immediately disposed of by the manager.
- The door seal to the walk in freezer in the deli area was damaged. Ice was building up around it. Repair or replace this door seal.
- The sub fridge in the deli and insides of cabinets and drawers in the deli and bakery had a build up of debris. Clean and sanitize these areas.
- The insides of the Alto Sham ovens and and hot cabinets had a build up of grease and debris. Clean and sanitize them.
- The microwave handle in the bakery had a build up of debris. Clean and sanitize it.
- The foot pedals to the northwest hand sink are loose and not working easily. Repair it. Replace the damaged/missing splash shield between the 3-compartment sink and the hand sink in the bakery. Repair the dish machine so it can be used. They are currently using the 3-compartment sinks only for dishes. Repair the air condition unit in the bakery so it does not drain onto the floor.
- Found build-up of debris on floors. Clean the floors, especially under and around equipment and the water on the bakery floor.

- Observed bare wood pallets with the icing buckets stored on them under the bakery counter. Provide easily cleanable shelving that is at least 6 inches off the floor.
- The blue cart in the deli had a build up of grease and debris on the trays on the bottom of it. Clean and sanitize it.
- There was no hot water at the Southwest hand sink by the walk in cooler in the deli. Corrected--It was turned off underneath and was turned back on during the inspection. Found no cold water at the West hand sink in the deli area. It had been turned off. When it was turned back on during the inspection, it was found to run constantly. It must be repaired. Contact TCHD (Kim) for a re-inspection when it has been repaired.
- The Southwest hand sink in the deli did not have a supply of hand soap. Provide soap at this hand sink.
- Found build-up of debris on floors. Clean the floors under and around the equipment.
- Repaint the scraped up walls on the outsides of the walk in cooler and freezer in the deli area. Caulk the wall/sink juncture on the deli mop sink to prevent water from seeping behind this sink.
