  • Observed a couple boxes of food stored on the floor in the walk in freezer, eggs stored in a milk crate on the floor in the walk in cooler, buckets of icing stored on the floor around the back kitchen hand sink, and buckets of ham stored on the floor in the walk in cooler. Store food at least 6 inches off the floor and away from plumbing lines.
  • Observed employees not wearing effective hair restraints. Hat or hair nets shall be provided and utilized by employees working with food.
  • The cutting boards on the prep tables in the kitchen were grooved and stained and need to be replaced or flipped over to the clean and smooth back side. There are bare particle board shelves in the walk in freezer. Paint or seal them so they are smooth, durable, non-absorbent, and easily cleanable.
  • Replace the damaged/broken door seals to the walk in cooler and walk in freezer.
  • The inside of the spice cabinet, cutting board prep table drawer, under the prep table cutting boards, crates in the walk in cooler, and inside of the cabinet under the chicken oven had a build up debris. Wash, rinse, and sanitize these areas.
  • The outsides of the wood cabinets in the kitchen had a build up of debris. Wash, rinse, and sanitize them.
  • Observed plastic tubs with cupcake wrapper and supplies in them stored on the floor under prep tables in the back kitchen area. Single service items must be stored at least 6 inches off the floor.
  • Repair the leaky faucet at the 3-compartment sink in the front kitchen area.
  • The hand sink in the back kitchen area was blocked by buckets of icing and racks of cookies when the inspector arrived. Hand sinks must be accessible at all times. Corrected--These items were moved away from the hand sink.
  • The restroom doors are not self-closing. Provided self-closing devises.
  • Repair the damaged area of the floor under and around the dry storage shelves in the hallway.
  • Found build-up of debris on floors under and around equipment and prep tables and in the walk in cooler. Clean the floors.
  • The ceiling was not finished (exposed rafters) above the dry storage shelves in the hallway. Finish/repair this ceiling.

  • Observed kitchen staff without hair restraints. Ensure effective hair restraint are worn.
  • Observed paper and paper towels used as a shelf liner in the cabinets beneath the slicer. Paper is not smooth, durable, or non-absorbent. Remove.
  • Observed quat sanitizer in 3 sanitizer buckets throughout kitchen that were at 0 ppm. The facility had the sanitizer dispensing unit serviced at the time of this inspection and the repairman fixed the block that was in the sanbitizer line.
  • Observed wiping cloths in the kitchen that were stored on counters. Ensure wiping cloths are stored in sanitizer solution when not in use.
  • Observed debris accumulation in the white microwave in the kitchen. Clean and ensure routine cleaning.
  • Observed debris accumulation on the following items/surfaces: Cabinet above radio, Cabinets in island across from the fryer, and both cabinets where spices are stored. Wash, rinse, and sanitize these items/surfaces and ensure routine cleaning.
  • Observed debris accumulation on floors especially beneath shelving and equipment. Clean and ensure routine cleaning.

  • Observed crab cakes that were labeled on the date they were made, but no the date they were removed from the freezer. Ensure potentially hazardous items are also labeled with the date they are taken from the freezer to thaw or for service.
  • Observed employee wipe hands on sanitizer towel and then touch muffins with her bare hands. The facility has a bare hand-policy. I explained to the employee that she must properly wash her hands before handling any ready to eat foods with her bare hands. The employee immediately properly washed her hands.
  • Employees did not have hair restraints. Ensure proper hair restraints are used.
  • Observed wiping cloths in the kitchen that were stored on counters. Ensure wiping cloths are stored in sanitizer solution when not in use. Do not use wiping cloths as a hand towel.
  • Observed hand sink in kitchen that was not draining water. Repair.
  • Observed table that was blocking access to handsink. Ensure hand sink is accessible at all times. The table was moved at the time of this inspection.
  • Observed debris accumulation on ceilings in kitchen and around exhaust fans. Clean.
  • Observed spray bottle in kitchen that was not labeled. Ensure all spray bottles are labeled. The bottle was labeled by staff at the time of this inspection.
  • Facility could not locate HACCP. Please provide by next inspection.
  • Facility could not provide cool down documentation. Please submit the last 30 days of cool down documentation to this department.

  • Observed doors to restrooms that were not self closing. Repair or replace.
