Observed 8 jars of condiments that had black growth on the containers. These items were voluntarily disposed of by the owner at the time of this inspection.

The facility does not have any temperature charts for cold storage. Temperature charts must be maintained. Facility does not have dates on cool down charts, just months. Ensure proper date labeling is provided for cool down documentation.

Several reachin coolers do not have thermometers.
Found several paper bags of dry goods uncovered in dry storage area.
Observed several employees improperly washing hands. The employees touched the handle of the faucet with their hands instead of using a paper towel to turn off the faucet. Also the duration of hand washing was less than 20 seconds. At time of inspection the hygiene issue was discussed with owner. If the facility can not demonstrate good hygiene/handwashing the privilege of a bare hand policy may be revoked. You need to conduct an extensive training going over proper handwashing. You also need to watch every employee (including servers) properly wash their hands. Documentation of this must be submitted to TCHD by 10/24/14.
Wash rinse and sanitize the following: Microwaves, inside and outside of cooling units, inside and outside of all cabinets and drawers, dishrack shelves, around dish machine, inside and outside ovens, and panini machine.
Glasses were found in server station and on drying rack that were stacked wet. Trays were found on drying rack that were stacked wet.
