Loss of power inspection- -Brian Ives reported on 3-8-04 that power had been lost at 2:45 pm and he requested assistance w/ reference to how to handle PHFs. At 5:00 pm,he was advised to keep refrigerators closed and move PHFs to freezers if time continued to be a factor. We discussed four hour time control. He had discarded hot food on steam table.and agreed to monitor temperature of units until 10:00 pm. It was decided that PHFs would be discarded after that time if they exceeded temperature requirements or if power was not restored before manager left at 10:00 pm. Inspection today revealed that power was restored at 601 pm and PHFs placed in freezer appear to have been maintained at proper temperature A time control was also in place..Operator did discard ice cream, and some meat salads and deli meats.
