Violation: 1450 - Repeat Make unit still not operating at proper temperature. Found unit at 43 F while salad dressing and relish were both at 47 F. No potentially hazardous foods were found inside the unit.
PIC is to place a cup of water inside the Make unit to monitor temperature. In the interim potentially hazardous foods are not to be stored inside the make unit until unit is operating at proper temperature.
Comments:
The reinspection found all the plumbing work completed. Pipes were capped, missing taps were replaced and all plumbing leaks corrected. The deep fryer was cleaned. The staff washroom were cleaned and soap dispensers adequately supplied with soap and operating properly. Margarine mix in mixing bowl was covered up. Still need to rodentproof the back exit door. Other structural work to be done at a later date. Food Permit was issued today.

Don't return any potentially hazardous foods to the cooler unit until the cooler unit is fixed and is operating at proper temperature.
Comments:
This was a follow-up inspection to determine whether cooler units were in good operating conditions. It appears that W-in cooler unit is now operating at proper temperature, however, the Make Unit was not. There was some organizing, tidying up, cleaning up and plumbing work done however more work was needed. Will return on December 28, 2007 to do another follow-up. No Food Permit was issued today.

W-in freezer was found with build-up of ice on floor and shelving. Service men were on-site to find source of water inside W-in freezer. Found 2 dented cans in dry storage area. These cans were pulled for discarding. No reservice of creamers once they are placed on the customer's table. The staff rest rooms were not adequately stocked with hand soap. Also not to use common towel in staff rest room. Remove extra soap dispensers at sinks that are not used as hand sinks. Permit expires December 31, 2007. Permit was not issued today. The establishment is to call this office the morning of Friday,December 21, 2007 for re-inspection. Must have refrigeration units corrected immediately. The PIC called Friday morning (December 21, 2007) indicating that the cooler units were working a proper temperatures.

A reported loss of, power inspection= Discussion w/ manager revealed that he was aware of loss of power yesterday but does not know for how long or whether PHFs were affected by loss of temperature control.Consultation with hotel revealed power was off from 2:45 pm to 5:50 pm. Refrigeration was not opened during that time and it appears that PHFs were not out of reccommended temperature range for longer than 3 hours.

Violations from last inspection other than the above stated have been corrected. Significant cleaning has been done. Some ceiling tiles that were water damaged have been replaced with acoustical tiles. They plan to replace these tiles with vinyl. 2004 permit issued.
