2000 - Corrected During Inspection Food boxes were found stored dry storage room. Store boxes in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.
Comments:
At time of inspection preschool kitchen appeared clean. Please monitor refrigeration temp so that foods in unit hold at 41F or below at all times. This may require adjusting the the thermostat of the refrigeration unit. Foods delivered are received prepackaged and precooked. Food gloves, sanitizer test kit noted.

Comments:
At the time of the inspection there was no food preparation in progress, nor were there any violations observed. Food gloves, date marking, hair restraints and sanitizer test kit noted. Food consumed is either brought from home or comes prepackaged and precooked. Pest control is done monthly. Fire extinguisher tag noted being up to date.

Violation: 2000 - Corrected During Inspection Foopd trays were observed stored with the food-contact surface facing upward. Store equipment and utensils covered or inverted to prevent contamination while in storage.

Comments:
All products are purchased pre-cooked and reheated, Only food prepared on premises is the macaroni and cheese. Observed food gloves, hair restraints, date marking, food gloves and thermometers. Facility uses throw away plates and utensils. Establishment has a employee health policy in place. At the time of the inspection there was no hot water due to water main break and the facility was using hand sanitizer at time of inspection.

Comments:
Discussed employee health policy (see file) Observed copy of Feb 08 menu. Regarding True refrigerator, suggest organizing (on separate shelves) DLCS foods and employee foods. Discussed sanitizer use in the kitchen. Quaternary ammonium and chlorine are both used. Test kits are available, always check concentration before using. All products served are precooked. Gloves available for use. No food preparation at time of inspection. Ensure a pest control program is in place.

Comments:
Received copy of October menu and employee health policy/practices. See file. Observed order from for test kit (Cl- and Quat), Quat tablets, hair nets, and food grade gloves. Hand signs have been placed at lavatories. Call when the following has been completed: Pest control contract, Exhaust cleaning schedule, and grease trap connected or exclusion from the building office. Fire Marshall inspected facility on Friday 9/14/07. An operation inspection will be done in approximately 30 days.

Comments:
Purchase a test kit for santizer (quat) Discussed wash rinse and sanitize procedures. Menu has not yet been written, but facility is planning to use precooked items. Suggest having a written employee health policy. Add handwashing signs to all lavatories, including rest-rooms. Establish a cleaning schedule for hood filters. Establish a pest control policy. Disposable utensils will be used. Purchase food grade gloves. Have accurate food thermometers available for use. Walk-in refrigerator and freezer are available and will be turned on if additional storage space is needed. Planning to serve 2-5 year old.Suggest keeping a temperature/sanitizer log.
