Comments:
1) The small prep table has been taken out of service (until repaired).
2) All potentially hazardous foods have been removed from the large prep table top. These items will be stored in the bottom. Turbo Air cooler has iced up. Potentially hazardous foods were removed and the unit will be defrosted.
3) Minor modifications must be made to the consumer advisory on the menu. Denote food items and state they may be cooked to order.

Bathrooms okay, dry storage okay, observed employees wearing hair nets. Fire Supression System 5/06.
Vent hoold is on a 6 month rotation and done more frequently by night staff.
Observed an alarm on automatic dishwasher - chemical sanitizer.
Made a suggestion to Sam Mumper that employees keep a temperature log. Observed today PHF not fully reheated and then put into hot holding (see chili and soup) Foods that are to be reheated need to reach 165 Degrees F as rapidly as possible before hot holding (140Degrees or Higher)
