Need to seal back door. Weather strip on back door is in need of repair or replacing, light seen around edges. All AC and fan units need to be cleaned, dust and debris present. Ceiling vents need to be cleaned, grease and debris present over food/food prep areas. Any unit above 41 needs to be adjusted so that the internal temperature is 41 or lower.

Complaint: Smoking around food. Vegetable soup on menu is actually vegetable and beef soup, loose faucets in bathroom and preparing food without gloves. Also smoking and preparing food without washing hands. Inspection: - Employees told to smoke by radiator in back of facility away from food prep. - Employees told to wash hands after smoking. - Facility policy is that employees wash hands and wear gloves when handling both ready-to-eat and raw foods. - Management does recall this complaint but has not received any other complaint or similar issues. - Gloves are not a requirement by the health department, be sure to wash hands between jobs if gloves are used. - Faucet is loose and will be repaired, water still works. - Recommend consumer advisory for foods cooked to order. Also ingredients of soup i.e. meats should be on the menu "recommendation." - Complaint not verified upon inspection.

Need to have a designated spot somewhere in the facility for employees to store there belongings. Dishmachine may need an alarm, visual or audio indicating when sanitizer is low. Under 12 VAC 5-421-1370 warewashing machines need sanitizer level indicator. Screen on back door in need of repair. If you need to purchase gloves recommend doing so because gloves are moving from a recommendation to a requirement as well as ServSafe Certs. for managers and people in charge. Be sure any food kept longer than 24 hours has common name and a use by or make date somewhere on the item. If dispensers are going to be stored in product, handles need to be stored handle up.

Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

0220 - Critical Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.
0550 - Dispensing utensils improperly stored between. Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 140F and the container.
0450 - Critical Employees observed handling ready-to-eat (RTE) food with their bare hands. Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
1770 - Critical Observed accumulations of grime and debris on the following food contact surfaces: backsplash of milk dispenser. Clean and sanitize these surfaces for food contact.
3170 - Physical structure is not maintained in good repair. Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
