Violation: 3180 - Debris/dust present under Rapids refrigerator and freezer.
All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
Comments:
All temperatures are internal temperatures unless otherwise noted.
Cream cheese temperature 47. As discussed during inspection do not over stock display refrigeration. Unit was observed at 32/35 degrees ensure all food items hold at 41 or lower. Per the person in charge the cream cheese was just stocked and lunch just ended.
2010 permit issued. Post in public view. Review emergency instructions on reverse side with all staff.
