Backflow Prevention Device, Design Standard Observation: The mop sink water line to the chemical mixer / dispenser lacks a backflow or backsiphonage prevention device identified as meeting standards set by the American Society of Sanitary Engineering.

Pre-Opening
Correct the following Items: 1) Install ceiling light over the pizza prep cooler to provide a minimum of 50 foot-candles of light. 2) Install a covered / shielded light in the center / rear of the walk-in cooler to provide a minimum of 10 foot-candles of light. 3) Repair the 2-door prep cooler. 4) Replace the 2-door prep cooler (by exhaust hood) with a 1-door upright cooler. 5) Remove the top-loading freezer & 1-door upright cooler. 6) Provide adequate approved shelving, dunnage racks, & carts as needed for walk-in cooler & dry storage. 7) Post handwashing signage at kitchen handsinks. 8) Install cove base / seal below 3-vat sink. Not approved for foodservice permit. No violation noted during this evaluation.
