- 0820 A 1 - Corrected During Inspection Critical Repeat Rice hot holding at improper temperatures. Production area
Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135F or above to inhibit the growth of harmful bacteria. Do not allow PHFs in the danager zone for extended periods of time. Rice discarded during inspection. - 0820 A 2 - Corrected During Inspection Critical Chicken cold holding at improper temperatures in the production area.
Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41F or below to inhibit the growth of harmful bacteria. Must keep all PHF's out of the temperature danager zone. Chicken discarded during inspection. - 2000 C - Repeat Single service items observed unprotected from contamination. Dispenser over stacked.
Store single service items in its original protective packaging or inverted in an approved dispenser. Do not over stack cups. Correct in one hour.
Food handlers must complete the cooling charts for chicken and steak. Without the charts PHFs may not be properly cooled within 6 hours.

- 0820 A 1 - Critical Chicken and steak, ground beef hot holding at improper temperatures.
Rapidly reheat the food to 165F and maintain at 135F or above through the hot holding period. Corrected during inspection - 1190 - The ambient air temperature measuring device degrees located in the door of rear hot box is broken.
Provide a temperature measuring device that is easily readable and accurate to +/-1.5 degrees Celsius in the intended range of use. Correct in 30 days. Until repaired install a rack hot range thermometer. - 2000 C - Corrected During Inspection Single service items observed unprotected from contamination.
Store single service items in its original protective packaging or inverted in an approved dispenser. Keep 6 inches up off floor during storage.

Violation: 1150 - The nonfood contact surface of the soda crates is not designed or constructed to be easily cleanable.
Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Replace the soda crates with dunnage racks for the chip storage under the service counter. Correct in 30 days.
Comments:
Insufficicent cooling space available for the chicken. Chicken will be cooked and choped at store location and transfered to Dalton Hall walkin for cooling. Keep time and temperaturecharts with product for review. Cool all PHF's to 69 or below in 2 hours and to 41 or below in 4 hours. All foods must be covered in transport. Send copy of the new cooling chart to the Montgomery County Health dept.when completed.

Comments:Spoke with Mr. Ferguson (authorized building compliance official for Radford University) who said the punch list for the facility dated 8-9-07 had been satisfactorily fullfilled and that a occupancy permit would be issued. Copy of the occupancy permit is to be e-mailed to Joe Brunk and Greg Corell at the Montgomery county office of the Virginia Department of Health. Permit to operate was issued 8-17-07.
