Violation: 1060 - Corrected During Inspection The nonfood contact surface of the wood rack holder in the reach in cooler is not corrosion resistant, nonabsorbent, and/or smooth.
Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Remove the wooden block and replace with an easy cleanable material.
Comments:
Label all rice containers with the discard time.

Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. Correct before opening unit.
Comments:
Before opening unit wash, rinse and sanitze all food contact surfaces. Final cabinet trim to be installed in 10 days. Provide a time-temp cooling log for chicken and fried rice.

Store food where it is not exposed to splash, dust, or other contamination to prevent contamination. Keep all previously opened personal beverage away from facility foods .

Rice PH 4.06 batch #4. Keep HACCP charts up to date.

- 0560 - Linens in contact with food.
Cease use of linens or napkins with food unless they are used to line a container for the service of foods. Linens and napkins must be replaced each time the container is refilled for a new customer. Do not store foods in contact with cloth. Correct in one day. - 0570 - Corrected During Inspection Wiping cloths improperly stored between use.
Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use. - 0860 - Corrected During Inspection Critical Specialized processing method of food preservation used for FISH/SEAFOOD . PH log not in use..
The PH log is not being used. PH checked and corrected. Use the meter and pull logs as specified in the corp. procedures.
Reminder keep all personal articles stored away from facititiy foods, linens and single service.

Violations:
- 0610 - Food stored in a location where it is subject to splash, dust or other contamination.
Install a splash guard on the hand sink adjacent to make table. Correct in 10 days. - 1060 - The milk crates used as shelving are not easy cleanable.
Replace the crates with dunnage racks so as to provide for easy access when cleaning. Correct in 10 days.
Sandwich make table is not in use, to be repaired. ( PH of rice 3.9) The current temperature danger zone in Virginia is 41-140 all charts and operating procedures must use this zone. Label all rice with the production time and date and use by date.
