Violations:
- 0470 - Corrected During Inspection Critical In the walk-in refrigerator, there were storage containers (with lids on them) containing lettuce, that were being stored below a pan of raw duck.
Raw meats must always be stored below all ready-to-eat and pre-cooked foods. This violation was immediately corrected by the establishment management, by placing the raw duck below the containers of lettuce. - 1530 - There were no test strips on hand for monitoring "quat" sanitizer levels.
We require that test strips be on hand for periodic monitoring of sanitizer levels. Since "quat" sanitizer is being used, tets strips for monitoring "quat" type sanitizers must be on hand in the establishment.
Handwashing, and dishwashing, procedures were being carried out correctly. No food temperature problems were observed.

Violation: 1080 - Corrected During Inspection There was a metal-banded pastry brush in the kitchen.
We do not allow metal-banded pastry brushes in food establishments, because the area between the metal band, and the brush, is not easily cleanable, at the bacterial level. And the metal can rust. Replace with a brush with a plastic band or with no band.

Violation: 0470 - Corrected During Inspection Critical In the walk-in refrigerator, there were plastic packages of raw pieces of fish being stored above plastic bags of shelled pecans.
Raw meats and raw seafood must always be stored below all ready-to-eat foods. This violation was immediately corrected by the establishment management.

- 0450 - Corrected During Inspection Critical A foodservice worker was touching cucumbers with bare hands while cutting the cucumbers.
We do not allow bare hand contact with ready-to-eat foods. Gloves, tongs, or spoons may be used. This violation was immediately corrected by the management. - 3140 - Corrected During Inspection There was an employee drink on a shelf in the back part of the kitchen which did not have a cover on it and did not have straw in it.
All employees drinks in kitchen, food prep, and food storage areas must be covered and have a straw in them. This violation was immediately corrected by the management.
Handwashing, and dishwashing, procedures were being carried out correctly.

Violation: 3080 - The lighting intensity in the back part of the walk-in refrigerator is less than two foot candles.
We require that the lighting intensity in all areas in the walk-in refrigerator be 10 foot candles or higher (measured 30 inches from the floor).
Comments:
