Opening Inspection:Facility will not be approved as a risk category 3; (meat health permit) until the following items are complete: DO NOT OPENInstall handsink with sanitary towel and soap dispenser; in addition; install handwashing sign.Clean and sanitize entire reach-in refrigeration system with 50-100ppm chlorine and install thermometers.All refrigeration must be operating at 40F or below before final approval.Install handwashing signs in restroom.Cover all mercury containing light bulbs with shields.Install more food preparation counters and work stations that are smooth and easily cleanable.Post Certified Food Protection Manager certificate and health permit when facility starts operations.Clean all floor surfaces; observed debris.Reminder: all food products must come from approved source; all meat products must be USDA marked and inspected.
