(B) FOOD EMPLOYEES shall minimize bare hand and arm contact with exposed FOOD that is not in a READY-TO-EAT form.
(C) Except when washing fruits and vegetables as specified under § 3-302.15 or as specified
in ¶ (D), FOOD EMPLOYEES may not contact exposed, READY-TO-EAT FOOD with their bare hands and shall use suitable UTENSILS such as deli tissue,

Violation 31 A: 3-501.15 Cooling Methods.
(A) Cooling shall be accomplished in accordance with the time and temperature criteria
specified under § 3-501.14 by using one or more of the following methods based on the
type of FOOD being cooled:
(1) Placing the FOOD in shallow pans;
(2) Separating the FOOD into smaller or thinner portions;
(3) Using rapid cooling EQUIPMENT;
(4) Stirring the FOOD in a container placed in an ice water bath;
(5) Using containers that facilitate heat transfer;
(6) Adding ice as an ingredient; or
(7) Other effective methods.
(B) When placed in cooling or cold holding EQUIPMENT, FOOD containers in which FOOD is
being cooled shall be:
(1) Arranged in the EQUIPMENT to provide maximum heat transfer through the container
walls;
(2) Loosely covered, or uncovered if protected from overhead contamination as specified
under Subparagraph 3-305.11(A)(2), during the cooling period to facilitate heat
transfer from the surface of the FOOD.
Violation 45 M: 4-202.16 Nonfood-Contact Surfaces.

This is a follow-up inspection concerning items listed on 4-1-09 food inspection report.
-Disposable gloves are available for the preparation/handling of ready to eat foods.
-Sanitizing concentration in the dish machine was recorded at 100 p.p.m.
-Soda nozzles, can opener, mixer and hood filters have been cleaned. Finish cleaning the slicer.
-Temperature in the spaghetti sauce stored in the walk-in cooler was recorded at 40f. Follow cooling practices outlined on the 4-1-09 food
inspection report.
-Table by the sink has been dismantled and will be discarded.
-A test kit is now available to check the concentration of dish machine sanitizer.
-Single-service towels have been provided at the hand wash station.
-Floor has been cleaned under equipment.

2. The pasta cooler was repaired and new thermostat installed-per owner the cooler was maintaining @ 35f but upon reinspect the cooler was
50f [pasta was removed and discarded.
3. Datemarking is being done using the production date. Monitor these items and check before 7 day limit. Use the food code guidelines when
uncertain of need for datemarking.

This is a follow up inspection to the 8/25/10 routine inspection.
Violation 14F Cleaning:
Clean dishes are stored clean.
Pizza dough mixer partially cleaned and dish rack partially cleaned. Manager Matt touched up these two areas while I was present.
Violation corrected.
Violation 20A Cold holding:
Walk in cooler is 39 f
Violation corrected.
Violation 21A Date marking:
All prepared and opened potentially hazardous food held past 24 hours is properly date marked.
