- Observed at time of inspection gravy that started cooling processes at 10:00 am was found to be 57 F at 4:00. Potentially hazardous food cool from 135 F to 70 F within 2 hours and from 70 F to 41 F within 4 hours. Gravy was discarded at time of inspection. Corrected after discussion with general manager. Employees will now use an ice bath to cool gravy to 41 F or below. This is a repeat violation fill out risk control plan and submit it to David Pearson at the Wayne County Health Department. If violation is not corrected at the next routine inspection an office consultation may occur with associated fee.
