Correction: Adjust method or procedures to cool foods to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours.

Observation: There is rope wound on the handle of the fryer strainer.
Correction: Repair equipment to good condition - remove the rope to provide an easily cleanable surface..

Observation: Food employee was noted shutting water off with his bare hands after washing.
Correction: Train food employees in proper handwashing techniques - turn off water with elbow or a paper towel covered hand.

Observation: Mashed potatoes cooling in the walk in were still at 80 degrees after three hours.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours.
- PACKAGED AND UNPACKAGED FOOD - COVERED CONTAINERS OR WRAPPING
Observation: Ice bins are not being covered when not in use..
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.

Observation: The food dicer is being held together with a shou string..
Correction: Repair equipment to good condition or remove from premise. Dispenser was discarded at inspection - a new one was already on order.

Observation: Single service articles such as straws and stir sticks are not available in the original intact wrapper or from an approved dispenser.
Correction: Single service articles shall be dispensed to consumers so they are protected from contamination.

Observation: Dumpster lids are not being kept closed.
Correction: Waste receptacles or waste receptacle units shall be covered or have tight fitting doors.

Observation: The dumpster storage enclosure needs to be cleaned of garbage / recycleables that have missed or fallen from the dumpsters.
Correction: Clear & clean the dumpster enclosures..
