    Observation: Thermometer in the beer cooler is broken. Thermometer in the prep cooler is located where it is not easy to read and monitor. The thermometer in the walkin cooler is not accurate, reads 46F and the cooler is 38F.
    Correction: Provide thermometers in all cooler containing PHF's and place them in the warmest part of the cooler and where they are easy to monitor.

    Observation: There are ready-to-eat foods (cheese, pudding cups) stored under a carton of raw eggs.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • Critical: PHF/TCS, COLD HOLDING
    Observation: The pickled onions were in the small Budweiser cooler at 54°F. The pickled eggs are on the shelf at room temperature and the bottle indicates refrigerate after opening. The beverage condiment tray was stored on top of the ice bin and at 70F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F
    Discarded the beverage condiment tray product, they were moldy. The other items were moved to the cooler.
  • CONSUMER ADVISORY (repeated violation)
    Observation: Consumer advisory on kids menu
    Correction: Remove advisory from kids menu, can not provide raw or undercooked food to children.

    Observation: A chlorine test kit is not available for checking sanitizer concentrations.
    Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
    I provided chlorine test strips today.

    Observation: Handwashing sink observed to have wiping cloth bucket in it during inspection and is unavailable for proper handwashing.
    Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing.
  • HANDWASHING CLEANSER AVAILABILITY
    Observation: Soap not available at food employee handwashing sink behind bar.
    Correction: Provide hand soap at handwashing sink to facilitate proper handwashing.

    Observation: Staff looked around for papertoweling and went to kitchen for towel.
    Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
  • LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME
    Observation: Salt is stored in unlabeled container.
    Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
  • WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
    Observation: Wiping cloth used for wiping counters stored in soapy water.
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
  • FOOD CONTAMINATION PREVENTED FROM PREMISE - NOT EXPOSED TO SPLASH AND DUST
    Observation: The flour container under the grill is uncovered and in an area subject to contamination.
    Correction: Cover at all times.

    Observation: Prep cooler in kitchen and beer/juice cooler behind bar do not have a thermometer accessible for monitoring temperature.
    Correction: Provide thermometer in each cooler for monitoring temperature is 41F or below.
