    Observation: Package of raw chix is stored above the package of raw beef in walkin cooler.
    Correction: Prevent nesting of raw animal foods and store raw animal foods in order of decending hazard to prevent cross contamination. Separate raw animal food species from one another except when combined as ingredients.
  • PERSONAL CLEANLINESS - HAIR RESTRAINTS
    Observation: Employee noted working in food preparation/cooking area without a hair restraint.
    Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.).
  • NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
    Observation: The ceiling vent tiles in kitchen and ice machine baffle have a buildup.
    Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.

    Observation: Non-food contact surfaces of the kitchen reachin refridgeration are dirty
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
  • CONTROLLING PESTS - INSPECTING PREMISE
    Observation: Old mice droppings were observed in the dining room storeroom and by the chest frezzer in basement.
    Correction: Clean up the old droppings and monitor for current activity. Marathon Pest Control is under contract.
