Critical: PERSON IN CHARGE DUTIES - EMPLOYEE HEALTH Observation: All employees need to review employee illness policy. Staff need to notify management of illness, management needs to follow illness policy. Complaint was recieved by Health Department in regards to sick employees handling food.
Correction: Provide training to all employees on the signs and symptoms of foodborne illness and explain the requiremnts for reporting to the person in charge.
FOOD CONTACT SURFACES - SOILED Observation: The ice machine needs cleaning to remove slime buildup on the splash guard.
Correction: Maintain food contact surfaces in a clean condition.
CERTIFIED FOOD MANAGER – REQUIREMENT Observation: There is no Wisconsin Certified Food Manager for this establishment.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days.
PERSONAL CLEANLINESS - HAIR RESTRAINTS Observation: Remind staff to keep hair pulled back and watch length of facial hair.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.).
PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR Observation: The faucet to to the food prep sink needs replacing.
Correction: The plumbing system shall be maintained in good repair. Repair or replace defective or leaking plumbing.
