    Observation: Fish and chicken have been moved unto a rack
    Correction: however are still only 1" off floor in the kitchen walk in cooler.;Store all food items 6 inches above the floor.

    Observation: Sliced tomato (45) and sliced onion (55) in upper prep cooler in kitchen are cold held above 41°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F by not over filling containers.
  • Critical: RTE/PHF-TCS PROPER DATE MARKING
    Observation: All back up food in salad bar cooler (back room) is not date marked (dressings, potato salad, fruit salad, etc). Taco meat in TRUE sliding door cooler is not date marked. Cooked hamburger, cooked red potatoes, fish, and clam chowder in kitchen walk in cooler are not date marked.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
  • HANDWASHING SINKS, INSTALLATION - WATER TEMPERATURE
    Observation: Hot water temperature at handwashing sinks are at 68°F in both restrooms in banquet area.
    Correction: Water temperature at a handwashing sink shall be at least 85°F and no more than 110°F.
  • IN-USE UTENSILS, BETWEEN USE STORAGE
    Observation: Ice scoops were improperly stored.
    Correction: Store ice scoop in bin with handle extended or in closed container to prevent contamination.
  • FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
    Observation: Fish, ham, and pickles are stored on the floor in the kitchen walk in cooler.
    Correction: Store all food items 6 inches above the floor.
  • THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE
    Observation: Condiment cooler waitstaff area and bar cooler in banquet area are not equipped with an integral or permanently affixed temperature measuring device.
    Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.

    Observation: There are ready-to-eat pizza sauce, pepperoni, butter stored under bacon & raw beef in prep cooler. Cooked bean/hamburger store below raw chicken in walkin cooler.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • Critical: PLUMBING - BACKFLOW PREVENTION DEVICE - WHEN REQUIRED
    Observation: Sprayer hanging below the lip of the sink.
    Correction: Repair.
  • CONSUMER ADVISORY
    Observation: Astericks provided on the 2 burgers on the kids menu, covered by advisory.
    Correction: New food code change does not allow for the service of raw or undercooked ground meat on a childrens menu. Remove astericks from menu when reprinted.
  • LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME (corrected on site)
    Observation: Sugar and salt containers not labeled with common name.
    Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
