Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (repeated violation) Observation: Cutting board on prep table, work surfaces and dishes not washed, rinsed and sanitized properly. Staff explained some are washed with soap & water but not sanitized
Correction: others items are washed and sanitized , then rinsed.
FOOD TEMPERATURE MEASURING DEVICES - PROVIDED (corrected on site) (repeated violation) Observation: No thermometer is present for monitoring temperatures in foods.
Correction: Provide thermometers that are easily accessible and capable of taking temperatures in food.
One thermometer was taken out of cooler today to use for cooking temps, I provided a second thermometer to keep in cooler.
WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES Observation: A iodine test kit is not available for checking sanitizer concentration in the glass machine behind the bar tha uses Bock Sanitizer.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
