Observation: Employee observed handling buns, pickles and cheese slices with bare hands while assembling burger sandwiches. Employee started using plastic/rubber gloves.

Observation: Several pans of corned beef roasts made 4 days ago are not properly date marked. Employee date-marked roasts prior to end of inspection.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Correct By: 16-Apr-2015
- DEMONSTRATION OF KNOWLEDGE (corrected on site)
Observation: The Person in Charge (PIC) is unable to demonstrate knowledge of calibrating stem thermometers. Employee was inserviced by inspector prior to end of inspection.
Correction: The person in charge shall obtain training or training materials in the areas of calibrating stem thermometers so they are able to demonstrate knowledge and train employees on proper food safety practices. Correct By: 16-Mar-2015
- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
Observation: A QUAT test kit is not available for checking sanitizer concentrations - only chlorine test kit observed at 3 comp. sink in kitchen - incorrect test strips for quat sanitizer used at these sinks.
Correction: Provide a quat-test kit or other device for measuring the concentration of sanitizing solutions. Correct By: 16-Apr-2015

Observation: Employee drinking cup without cover was observed above Adesa food prep cooler in food preparation area. Cup was removed to safe area.

Observation: Plastic spoon for dispensing mushrooms for sandwiches was observed with handle of spoon lying in mushrooms ar Edesa prep cooler - improperly stored.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F. Correct By: 16-Apr-2015
- THERMOMETERS - FUNCTIONALITY - WARMEST PART OF UNIT
Observation: Thermometers in some coolers are not properly located.
Correction: Reposition thermometers so that they are located in the warmest part of the refrigeration unit. Correct By: 16-Apr-2015
