Critical: FOOD CONTACT WITH EQUIPMENT AND UTENSILS (corrected on site) Observation: Soda beverages were observed coming into contact with slime buildup in the soda gun nozzle. Correction: Food contact surfaces of equipment shall be cleaned and sanitized before use with food. The operator disassembled, cleaned, and sanitized the soda gun at the time of this inspection. CONSUMER ADVISORY Observation: No consumer advisory provided or the consumer advisory on menu is missing. Eggs are cooked to order. Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition. Suggested consumer advisory for menu: place a star next to the BREAKFAST title on the menu that leads to a footnote star stating 'Soft cooked eggs such as sunny side up or over easy may be undercooked. Whether dining out or preparing food at home, consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions. Correct By: 18-Jul-2014 WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES Observation: A chlorine test kit is not available for checking sanitizer concentrations. Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions. Correct By: 18-Jul-2014 IN-USE UTENSILS, BETWEEN USE STORAGE Observation: Knives were being stored in the gap between the prep table and the prep cooler. This area is not cleaned and sanitized every four hours. Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
