  • Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS
    Observation: No gloves available for employee to eliminate bare hand contact with ready to eat foods.
    Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods. Provide gloves or some other means.
  • Critical: DATE MARKING - DISPOSITION
    Observation: Cut lettuce, cheese, sauces in Ascend unit is not provided with a date mark.
    Correction: Date mark all required foods. Leafy greens and cut tomatos are considered potentially hazardous. Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked.
  • Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS
    Observation: The bar glasswasher has a sanitizer concentration of 0 ppm. Employee does not have a key to get a replacement bottle of chlorine out.
    Correction: Sanitizer concentration shall be 50 ppm. Wash, rinse and sanitizr by hand until unit is sanitizer properly. Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
  • HANDWASHING CLEANSER AVAILABILITY
    Observation: Soap not available at food employee handwashing sink behind bar. Employee stated they wash in kitchen area. A handwash sink is required in the bar area.
    Correction: Provide hand soap at handwashing sink to facilitate proper handwashing. There are two behind the bar with wrist paddles/blades. Only one shall be handwash. The other can be dump sink.
  • HAND DRYING PROVISION
    Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying behind bar.
    Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
  • TOILET FACILITIES - ENCLOSED
    Observation: Mens restroom is not provided with a tight fitting self-closing door. No self closer.
    Correction: Provide a self- closing door mechanism on bathroom door to provide a tight fitting self closing door.
  • HANDWASHING SIGNAGE
    Observation: No handwashing signage provided at handwashing sinks in both mens and women restroom .
    Correction: Provide handwashing signage at all handwashing sinks used by food employees.
