Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Date was added to beef and alfredo sauce date was fixed.
Critical: SEWAGE - BACKFLOW PREVENTION Observation: A connection exists between the sewage system and prep sink drain. It appears the pipe support has come loose from the wall, so the pipe is sitting in the sewage drain.
Correction: Design the system in a manner that would preclude a connection between the sewage system and the drain. Remove the connection with a proper air gap. Correct By: 01-May-2015

UTENSILS, EQUIPMENT AND LINENS - AIR-DRYING REQUIRED Observation: Clean food bins are being stored or stacked without being air-dried. Clean utensils are being air-dried in the upright position so when used for service the food contact area will be touched by employees.
