Observation: There are ready-to-eat eggs rolls and chicken stored under raw chicken in the Beverage Air 2 door reach in cooler. Raw chicken was also stored over half cooked chicken.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Raw foods were moved under ready-to-eat and half cooked foods during the inspection.

Observation: Sushi on the cold buffet line was observed cold held at 60.2, 63.4, 63.7°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Sushi was moved to a deeper pan and ice was then in contact with the dish to keep colder temperature.

Observation: Previously cooked food items such as beef and egg rolls in the walk-in cooler did not have a date mark.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Date mark was added to items during the inspection.

Observation: Food contact surface lids of the flour in the dry storage area are unsafe. Surfaces need to be easily cleanable and non-porous.

Observation: Wiping cloth sanitizer was observed not being used according to manufacturer’s use directions. Concentration was 200+ ppm at time of inspection.
Correction: Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use. Sanitizer concentration was diluted during the inspection to 50ppm.

Observation: Foods such as raw meats were observed in the walk-in freezer to be stored in single use take out plastic bags. Bags are subject to tearing and could freeze in to the raw meats creating a cross contamination.
Correction: Discard equipment and storage items that are not: corrosion resistant, durable, able to withstand repeated warewashing, smooth, easily cleaning, nonabsorbent, and resistant to pitting, scratching, scoring or decomposition. Correct By: 15-Sep-2015

Observation: Non-food contact surfaces of walk-in cooler door and seal were observed soiled with debris and not closing tightly. The back establishment exit door was also observed to have mold around the door molding and wood, especially looking at the top of the door area.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment. Correct By: 15-Sep-2015
