Observation: Mushrooms, chirizo, and diced chicken were observed cold held at 45-50°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Foods were moved to the True 3 door reach in cooler during the inspection and service was called for the unit.

Observation: Mashed potatoes in the True 3 door reach in cooler were observed without a date mark.
Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked. Potatoes were discarded.
- Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site)
Observation: Glassware was observed not being sanitized after cleaning in the front dishwash unit.
Correction: Clean and sanitize all utensils and equipment before contact with food. Facility will take glassware to the back kitchen unit until front unit repaired. Service was called during the inspection.

Observation: Sugar was observed stored in the waitstaff area and in the dry goods area in unlabeled containers. Pepper and salt bottles were observed with the label wearing off.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient. Containers were labeled appropriately during the inspection.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site) (repeated violation)
Observation: Wiping cloth used for wiping counters observed stored on the counter.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.

Observation: Chili, wild rice, pork loins and ugly potatoes in 3 door prep cooler(right) on line - improperly date marked. These items date-marked prior to end of inspection.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.

Observation: Numerous toxic cleaning chemicals are stored over clean dish drain-board area at end of automatic dishwasher line. Toxic items were moved to safe place.
Correction: Rearrange area so that toxic materials are stored below or away from food, equipment and single service items. Correct By: 06-Jan-2015

Observation: No thermometer is present for monitoring temperatures in foods at food prep line for cooks.

Observation: Handwashing sink observed blocked by tall garbage can during inspection and is unavailable for proper handwashing.

Observation: Food is subject to potential contamination by lack of separation barriers at both the food-prep hand wash sink and the mop sink next to clean dishes table. Hot food tongs are hanging on stove handles directly next to large garbage can.
Correction: Change methods or procedures to protect foods from contamination. Install separation barriers in these areas. Move garbage can. Correct By: 06-Feb-2015
