Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked. Potatoes were discarded.
Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site) Observation: Glassware was observed not being sanitized after cleaning in the front dishwash unit.
Correction: Clean and sanitize all utensils and equipment before contact with food. Facility will take glassware to the back kitchen unit until front unit repaired. Service was called during the inspection.
LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME (corrected on site) Observation: Sugar was observed stored in the waitstaff area and in the dry goods area in unlabeled containers. Pepper and salt bottles were observed with the label wearing off.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient. Containers were labeled appropriately during the inspection.

Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
