Observation: Boxes of raw chicken and raw chicken on trays in the cart rack in the walk-in cooler were observed to be unwrapped or uncovered.
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods. Correct By: 28-Jul-2015

Observation: The walk in cooler was observed to have ice build up behind the condensor unit and a patch of ice on the cooler unit floor near the storage racks.
Correction: Repair equipment to good condition and remove ice buildup on floor. Correct By: 03-Aug-2015
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Non-food contact surfaces of the outside of the ice dispensing unit on the soda machine and the condensor pipes in the walk-in coolers are soiled with debris, dust, and mold.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment. Correct By: 03-Aug-2015

- LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME (corrected on site)
Observation: Tub of cinnamon mixture is stored in unlabeled container on the back dry storage shelf.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient. During inspection, the tub of cinnamon sugar mix was labeled.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY (repeated violation)
Observation: There are tiles missing and broken from the floor throughout the chicken preparation area. Grease and water is accumulating in areas where tiles are missing.
Correction: Replace the missing and broken floor tiles so that the floors are easily cleanable and do not allow the accumulation of grease and water. Tiles are currently in the process of being replaced. Correct By: 14-Jun-2014
