  • Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site)
    Observation: There are ready-to-eat cooked rice noted stored under raw beef in walk in cooler.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • EQUIPMENT AND UTENSILS - FOOD CONTACT SURFACES, CLEANABILITY
    Observation: Plastic container in walkin cooler with cooked chicken in it, noted cracked and no longer easily cleanable. Pots with handle taken off therefore rough metal hole in dish is not easily cleanable.
    Correction: Provide food contact surfaces that are smooth, free of sharp edges and are free from breaks and cracks.
  • FOOD CONTACT SURFACES - SOILED
    Observation: Clean" utensils for prepping meals noted visibly soiled. Trays in back room for cut food that were "clean" also noted with food debris.
    Correction: Maintain food contact surfaces in a clean condition.
  • EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS
    Observation: Bulk items (flour, sugar ) noted stored directly in garbage cans. A garbage can is not ANSI certified or approved by the department.
    Correction: Place the bag of bulk items in garbage can, not directly in can. Unapproved equipment shall be removed from food service.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: Non-food contact surfaces of shelves in walkin cooler (underside) are soiled with old food debris. Top part of back freezer noted with mold buildup.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
