- Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
Observation: The QD II sanitizer is not being used according to EPA registered label use instructions and is at 100 PPM.
Correction: Provide training to employees on proper use and concentration of sanitizer and how to use test strips to check. At least 1 full pump of sanitizer shall be used to obtain 200 ppm quat sanitizer.
Sanitizer was added during inspection and Stacy indicated she will let other employees know.

Observation: Soda gun noted visibly soiled.
Correction: Maintain food contact surfaces in a clean condition. Soda guns shall be taken apart and thoroughly cleaned and sanitized by wiping down with a cloth and washing the spout in the sinks. Just soaking the guns will not keep them clean. Gun was taken apart and cleaned during inspection.

- Critical: COMPLIANCE WITH FOOD LAW - UNAPPROVED SOURCE
Observation: Pizzas being made at Capitol Center, another restaurant operated by Plamann. Restaurants are not allowed to wholesale food products to another business. Pizzas are considered to be from an unapproved source as Capitol Center is not licensed to wholesale.
Correction: Discontinue obtaining pizzas from Capitol Center. Food shall be obtained from an approved source. Contact the State of Wisconsin DATCP for further information on obtaining a food processing plant license at Capitol Center.
- HAND DRYING PROVISION
Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying. This has been an issue at the last several routine inspections. Jay has previously indicated that a paper towel dispenser will be installed behind the bar, but it has not yet been done.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing. Discontinue using cloth towels or napkins to dry hands. Correct By: 07-Jul-2014
