Observation: Rice noodles and wontons stored on box adjacent to the cooking station is cold held at 51°F.
Employee placed the listed items back in the upright refrigerator.
Correction: Maintain cold potentially hazardous foods at or below 41°F
- THERMOMETERS - AMBIENT AIR AND WATER - ACCURACY
Observation: A thermometer is not present in the small line prep cooler to measure ambient air.
Correction: Provide a thermometer in all coolers.
- HANDWASHING SINKS, INSTALLATION - WATER TEMPERATURE
Observation: The water volume pressure is inadequate and hot water is not available.
Employees are currently washing their hands at the 3-compartment sink.
Correction: Water temperature at a handwashing sink shall be at least 85°F and no more than 110°F.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Cup in the fried rice container and flour containers do not have handles and are unable to be stored in a manor to prevent contamination.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- EQUIPMENT AND UTENSILS - MATERIAL FOR CONSTRUCTION AND REPAIR
Observation: Food contact surface of pu pu platters are cracking and corroding and old cans are being used for food storage containers.
Correction: Discard equipment and utensils that are not: corrosion resistant, durable, able to withstand repeated warewashing, smooth, easily cleaning, nonabsorbent, and resistant to pitting, scratching, scoring or decomposition. Only use approved food storage containers.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Multiple non-food contact surfaces in the kitchen such as the handle of the upright refrigerator and handle of the walk-in cooler are soiled with food encrustations.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: The ice machine is not cleaned on a frequent basis. Observed mold build on interior side walls and the interior back side of the ice machine.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
- UTENSILS, EQUIPMENT AND LINENS - SOILED AND CLEAN TABLEWARE
Observation: Food storage containers are not being cleaned on a frequent basis. Encrusted accumulations observed on working food containers.
Correction: Clean containers on a routine basis to prevent encrusted accumulations.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: The shelving located by the dishwashing area above clean equipment has paint chipping and flaking occurring.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
