After speaking to CFM noted that date mark was not changed after freezing, freezer dates do not count towards 7 days re-date with a use by date. After speaking to CFM determined that chili was 8 days old and should have been discarded.
    Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked.

    Observation: Slicer is visibly soiled.
    Correction: Maintain food contact surfaces in a clean condition.

    Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.
