Observation: Employee observed not washing hands before placing clean gloves on to handle French bread to toast.
Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands.
- Critical: PHF/TCS, COLD HOLDING
Observation: Cooked noodles in cold water bath on counter were temped at 51 degrees.
Owner refilled the ice bath and covered in cold water. When re-temped, noodles were 37 deg after a 1/2 hour in (renewed) ice bath. (CORRECTED DURING INSPECTION)
Correction: Maintain cold potentially hazardous foods at or below 41°F
- PROPER COOLING METHODS - CRITERIA (corrected on site)
Observation: Improper cooling methods are observed for taco meat in walk in cooler. Cooked ground hamburger was cooked, grease dried, and placed in a deep, covered, metal pan in the walk in cooler for cooling. At the 5 hour mark the meat was still temping 83 degrees.
Owner put meat in a shallower, uncovered pan and placed it in the freezer for the remainder of the cooling process.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.

Observation: Items pertaining to the consumer advisory printed on the menus are not asrisked.
Correction: Provide a complete consumer advisory for animal foods served in a raw or undercooked condition.
- USING A HANDWASHING SINK - ACCESSIBLE
Observation: Handwashing sink observed being used as an air-drying sink during inspection and is unavailable for proper handwashing.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing.
- TOXIC SUBSTANCES - IDENTIFYING INFORMATION, PROMINENCE - COMMON NAME-WORKING CONTAINER (corrected on site)
Observation: Working containers of bleach by the bar sink not labeled with contents.
Employee wrote "Bleach" on the working bottle with a marker.
Correction: Label working containers.
- FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
Observation: Food−contact surfaces of the upright freezer in the kitchen have encrusted food accumulations.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
- LIGHT BULBS - PROTECTIVE SHIELDING
Observation: Lights located in the walk in freezer are not shatter resistant.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
- HANDWASHING SIGNAGE
Observation: No handwashing signage provided at the kitchen and restroom handwashing sinks.
Correction: Provide handwashing signage at all handwashing sinks used by food employees. Signage provided.
