- Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS
Observation: There are pound-size blocks of butter stored under raw hamburger in the True line cooler and shredded cheeses and boxes of mushrooms stored under boxes of raw burgers in the walk-in-cooler.
(CORRECTED DURING INSPECTION) All raw burgers in both locations were placed on the lowest shelf and ready-to-eat food items stored above.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
- Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site)
Observation: Chili, chicken dumpling soup and taco meat are not properly date marked. Items listed do not have the date it was made on them or if freezing occurred within the 7-day time frame, there is not date indicating when it was pulled from the freezer and amount of time remaining from initial make date and pulled to use date.
(CORRECTED DURING INSPECTION) CFM was contacted and knew the date of all items listed.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- DEMONSTRATION OF KNOWLEDGE
Observation: The Person in Charge (PIC) is unable to demonstrate knowledge of when the chili, chicken dumpling soup and taco meat were made.
Correction: The person in charge shall obtain training or training materials in the areas of date marking so they are able to demonstrate knowledge and train employees on proper food safety practices.
- HANDWASHING CLEANSER AVAILABILITY
Observation: Soap not available at food employee handwashing sink in the kitchen.
Correction: Provide hand soap at handwashing sink to facilitate proper handwashing.
- PACKAGED AND UNPACKAGED FOOD - COVERED CONTAINERS OR WRAPPING
Observation: Large container of chili in the Norpole cooler and the large ice bin used for drink ice behing the bar was observed to be uncovered .
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.
- FOOD CONTAMINATION - FOOD PREPARATION
Observation: Tomatoes, onions, and sliced cheese in the burger prep cooler on the line subject to potential contamination by the raw burgers that are stored directly adjacent to these items on the top portion of the prep/line cooler.
(CORRECTED DURING INSPECTION) Listed items were relocated away from the raw burgers.
Correction: Remove food from this location or provide alternate methods to protect food from contamination.
- EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED
Observation: White metal shelving unit in the walk-in cooler does not have a smooth-cleanable surface and has significant rusting. Rust is flaking on some edges and corners as well.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
- FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
Observation: Food−contact surfaces of the soda gun nozzles have encrusted soil accumulations and a slime build-up is present.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Non-food contact surfaces of the pizza drip trays and the catch cups of the soda guns are soiled with excessive pizza drippings on the drip trays and a slime-like buildup is present in the catch cups.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- CLEANING, FREQUENCY AND RESTRICTIONS
Observation: The walls and ceiling in the walk-in cooler have a slight mold-like build up present.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
