FOOD CONTACT SURFACES - MANUAL WAREWASHING - USING DETERGENT SANITIZERS (corrected on site) (repeated violation) Observation: The 3 compartment sink was not properly set up or being properly used at time of inspection. Per employee on duty, the sanitizer sink was being used to wash glassware/equipment and detergent was used for sanitizing.
Correction: Train employees to set up 3 compartment sink in the correct manner for proper warewashing: wash (detergent tabs), hot rinse water, sanitizer (Chlor Tabs) for all glassware and food equipment. Immerse the glassware and equipment in the sanitizer to effectively sanitize and allow to air dry. Correct By: 08-Jan-2014
