FOUND READY TO EAT FOODS IN REACH IN COOLER AND AT SERVING COUNTER AT FRONT PREP AREA READY TO FOODS(SUCH AS COOKED BEANS,COOKED CHICKEN,TACOS,SAUCES,ETC.), WITHOUT COVER HAD OTHER FOOD CONTAINERS, STORED DIRECTLY INSIDE AND ABOVE THEM.CITATION ISSUED 7-38-030 SERIOUS INSTRUCTED TO HAVE READY TO EAT FOODS COVERED FIRST BEFORE STORING ANY THING INSIDE OR ABOVE IT,AND RAW MEATS AWAY FROM COOKED/PREPARED READY TO EAT FOODS.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. INSTRUCTED TO INVERT ALL CLEAN UTENSILS ON SHELVING UNITS.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. INSTRUCTED TO REDUCE THE LENGTH OF CHEMICAL AND DETTEGENT DISPENSER IN 3COMP. SINK
All food not stored in the original container shall be stored in properly labeled containers. INSTRUCTE TO PROVIDE DATE ON PREPARED FOOD CONTAINERS IN COOLERS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED TO CLEAN DEBRIS ON FLOORS BEHIND BEHIND REAR REAR EXIT DOOR,AND SEAL OPENINGS ON FLOORS AT SAME LOCATION.
The walls and ceilings shall be in good repair and easily cleaned. INSTRUCTED TO REPAIR AND REPLACE WATER DAMAGED CEILING TILES IN KITCHEN AND MISSING ONES AT HOT TANK AREA.ALSO VENT IN TOILET ON WALL WITH DEBRIS,AND WALLS AT 3COMP. SINK WITH STAINS NEEDS CLEANING.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. INSTRUCTED TO REPLACE BROKEN LIGHT SHIELD ABOVE PREP TABLE AT REAR KITCHEN.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. INSTRUCTED TO REPAIR FAUCET JOINT HEAD ON 3COMP. SINK BEING HELD WITH STING,AND LEAKING TOO.
