I did fix my chicken thighs in a small Presto brand deep fryer. Dipped the thighs in egg batter...coverd with bread crumbs...allowed to sit in fridge for a couple of hrs and did two pieces at a time.

Fryer works real well at a constant high temp and does overcook the outside bread crumbs before cooking the inside completely. Think I will return to boneless chicken as I can cut the chicken into smaller pieces that cook evenly based upon my last experience.

With the thigh bones my two dogs get a treat...they are spoiled.

The fryer does a nice job cooking french fries...real easy and quick.

Steve
