Very simple this evening. Scrambled Eggs with cheese and toast. We had take out curry last night so something a little less rich will be nice.

Corned beef and cabbage with potatos and carrots, one of my friends calls it a New England boiled dinner.. I say wouldnt it be an Irish boiled dinner..?

Quick and simple .... toasted ciabatta rolls spread with goat cheese, and diced tomatoes and basil sprinkled on top. Topped with grated Pecorino cheese, and grilled lightly.

Sloppy Joe's, corn on the cob and, baked fries with lots os seasoning and the skins left on. Peanut butter brownies for dessert, as they have been told no more desserts until Thanksgiving.

Last night: The veggie "meat"balls and risotto that we didn't have the previous night (had the leftover Costco chicken alfredo instead).

Tonight: Pasta and tomato sauce.

Tomorrow: Dungeness crab! Yum, yum, yum.

Day early but will deep fry some chicken thighs tomorrow.

Do you think 8 thighs will be enough for one person?...then again nothing wrong with cold leftovers when it comes down to fried chicken. I love cold fried chicken with a slice of french bread as a snack.

I'm a small woman and 2 or 3 chicken thighs is enough for me. Unless you're a really big guy I'd think 5 would be plenty - that way you'll have leftovers
