Noticed one of your recipes is from the crockpot365 site. Not sure if you've tried any of her stuff before - I have with mixed results but definitely have several keepers Let us know how the enchiladas are!

Decided not to cook afterall - picked up a gyro and might stick with the theme and have some home made hummus later too.
Today is DH birthday - so..............fried cubed steak and pan gravy, homemade mashed potatoes, mac & cheese, large lima butterbeans I soaked overnight, corn bread, collards, devils food cake with white icing. I am tired just thinking about it!
Interesting, I've never thought of using pizza in a salad.
Tonight is the great unknown, we usually just order in on Fridays. So I'm trying to decide the weekends' meals..tossing up between jambalaya, chicken stroganoff or Tuna Dijon for Saturday. In case I don't get to the puter over the weekend, it'll be one of those and another of that group for Sunday. (I can't believe I used to hold recipe books upside down)!

I threw a beef roast into the crockpot this morning, along with a bottle of BBQ sauce. We had that for dinner, with steamed green beans & garlic mashed potatoes.
Guess what's for dinner tomorrow night? Leftover roast! LOL
