We are having company so I am going a little gourmet: we are having crab stuffed chicken breast, ceasar salad, parsley noodles and mashed squash. This certainly isn't our usual Monday feast..

Sigh.... I'm going to make a tuna casserole tonight. Sounds boring, right? Actually it's pretty good when I jazz it up some.

Some friends of mine are moving overseas and wanted a traditional Thanksgiving dinner before they left.

I made everything except the pies...

Gosh with all these wonderful meals mine pales by comparison.

Braised short ribs in red wine, beef stock, with roasted carrot, celery puree over short Mezza pasta, salad and crispy bread.

Time to get out the crockpot! I am making eggplant ratatoiulle, with squash and other veggies. Put it over Ziti...there is your dinner, pass the cheese!

I have crawfish and chicken gumbo going right now, serving it with rice of course, making some cheddar corn muffins to go with the gumbo, too.
