Last night was oven roasted bone-in chicken breasts, chicken rice-a-roni, salad. Tonight is a question mark since I have to go to the grocery store. It will be something easy though!

I'm having friends over and picked from my bookmarked recipes:

Chicken Rollatini with Spinach alla Parmigiana | Skinnytaste
Slow Cooker Paprika Pork over Parmesan Polenta | Bev Cooks (just the polenta)

My friend is picking up veggies for a side. I gave her both of these and told her to get whatever comes out cheaper.
For the Love of Cooking » Vegetable Tian
Authentic Suburban Gourmet: Maple Bacon Braised Brussels Sprouts + Lancaster Estate Winery

I just decided to make this too, for "dessert" lol

My latest experiment in quickie meals is frozen shoestring fries, pan fried then removed, Mexican chorizo saute'd, re-add the fries, and top with cheese. Then I wrap it in a tortilla. It's basically a fast "chili" cheese fry burrito. Hey, it's quick. And chorizo is a better chili than canned, when you need a minute fix.

And, yes, I am waiting for the end of this year to stop this quick meal trend I've been on.

Friday night is the night nobody wants to do any heavy lifting, and keeping things simple and easy.
Angus burger on the grill, on a sesame seed bun. Fries in the oven..
