I'm trying out Ina Garten's recipe for Winter Minestrone Soup with Garlic Bruschetta. Even though the weather has been warmer, I'm still in the mood for a winter soup. I got all the ingredients ready last night, soaked the beans...ready to go! Maybe a small salad on the side but there is a lot of spinach and/or Kale to be added to the soup so we may have enough of the greens already.
I know is it still lent and i am not a good catholic: well to be honest I am not catholic anyway, but I was raised with fish on Fridays, especially during lent: This week we have had fish twice: I am going to pretend one of those nights were Friday and we are having chicken over pasta, with fresh basil, and pine nuts for dinner. Of course green salad is always a must with pasta.

I also bought a spiral ham (half) which was on sale for 99 cents a lb and hubby had been craving it so I will just heat it up in the oven later. I won't eat because it's too salty.
