This is one version. You can use any hot pepper to your liking. I use serrano, jalapeno, and home grown fresh cayenne.

Sweet corn is coming into season so here is another one from my MO gardening days.

1 dozen large ears of fresh sweet corn cut and scraped of the cobs getting as much of the corn milk from the cobs as possible.

3-6 fresh cayenne peppers. If not available 2-3 fresh green or red jalapenos will do.

If using cayennes leave them whole with stems removed. If using jalapenos cut them into long strips and discard seeds.

Saute peppers in an iron skillet until slightly wilted using a small amount of olive oil. A teaspoon of bacon drippings will add flavor. Add corn and simmer until the corn is cooked to your prefered taste. Remove and discard cayenne peppers. Repeat discard cayenne peppers. That's a disclaimer! Anyone who attempts to eat them is responsible for their own herbal thermal energy! If you use jalapenos pick them out if you can't handle the heat. The corn either way will be flavored with out excessive heat or spice. Start with fewer peppers and work up!

If you eat the cayenne or eat the corn to excess you will pay a price! Both have been done and my friends both recovered nicely. But they did pay a price. Think about it. My wife doesn't like the peppers but she loves the corn. Now who's doing the brisket? And I would like a chocolate pecan pie too.

Tonight we golfed a par 3 course -- such fun for me b/c i am not a very good golfer at all!

On the way home we stopped by a little old italian restaurant named lechugas in our neighborhood and picked up a dozen sausage "canolis" (pigs in a blanket) and had them along with some sweet, juicy bi-color corn. Our friends came over to share in our simple meal

Everyone have a great day---I will be gone today as I have about 250 miles to drive to help my DIL get to her Dr. and then off to Charlotte to do the signing for their new home. I will have to stay down in Charlotte for about 4 hours to wait for the time to do the signing--yuk! Plus it's suppose to rain all day--oh joy. Obviously I won't be here and I haven't a clue what I'm making for dinner--probably my old stand-by--pasta! Later......Enjoy sharing and talking about FOOD!!

Back a few pages, someone was making enchiladas. That sounds good for a change. I think I'll make beef enchiladas, refried beans and some rice. Labor intensive, but yummy.

Morning all-safe journey Cyn!!! Crazy T-storms here this morning, sky was bright red and so eery this morning.

Think we're going to our local Cheers tonight and chat it up with the locals.

I'm thawing out a thin beef roast that can be fixed as a steak. Will be on the road so I may just take the easy way out tonight and raid the hurricane supplies for some quick and easy canned veggies. Enough chocolate pudding left for one more night.

Too early for me to think of supper yet. DH hasn't been feeling too great all week, and I do have some roast beast in the fridge that I have to use in some kind of leftover dish. Just not sure what. It could be hot sandwiches or hash or lo mein or beef stroganoff. One of those. Or just heated up roast beast w/gravy. We're taking our neighbor to the airport this afternoon, so anything can happen.
