Morning all-we have an early start to drive 75 mile to ar dealership to have problem fixed with remote starter. Just have a feeling it's going to be a long, unproductive day so I'm bringing the Chinese take-out menu with us. Dinner-pork lo mein and ribs for hubby, shrimp n brocolli for me.
Hubby threw together one of his great meals last night and it was wonderful! We had Tilapia fillets for the first time last night. After hearing so many of you cooking it we decided it was time to give it a try. Hubby melted some butter in a fry pan and added, here we go as it is a list and a half----sweet onion, bell pepper, fresh ginger, crushed walnuts, fresh garlic, s&p, Marcella wine, seasame seed oil (with the butter ) celentro, seasame seeds, lemmon zest, Italian seasoning, and nutmeg. Of course not necessairly in that order. I know he simmered it all down a bit and then added the fillets, covered and sort of poached the fish. He just seems to add whatever he thinks would add flavor and it sure did. He spent a good amount of time chopping and rummaging through the cupboards and fridge. It was sooooo good! I made some long grain and wild rice and a salad to go along with it. I think he can cook just about anything and make it taste wonderful. Now I wish I could get him to be the primary cook in our house---although he already does help out! Not sure about tonight yet....need to take the dog for a walk and then maybe I'll be awake enough to think clearly about it! The reminents of Fay finally hit hear yesterday and last night. Got some much needed rain. Very nice! 'Spose to be more to come the rest of the week. Good cooking weather!
I love reading all about the foods you are all making---I can almost smell and taste them the way you describe them. I think this thread is a little fattening--oh well! Always good reading and good friends here.
Just threw a small piece of brisket in the crockpot. We'll have that with grilled corn-on-the-cob and tomato salad (got some yummy ones at Sam's!). If the school bus gets here in time this afternoon, maybe I'll make some corn muffins to go with the meal. Gotta eat quick since DS has homework and baseball tonight!

Took a couple of boneless, skinless chicken breasts out of the freezer....now how do I want to prepare them? Hmmmm .......I know that I will have mashed potatoes and of course some more fresh tomatoes with it..any ideas on something different that isn't a terribly difficult way to prepare with these chicken breasts? They are actually half chicken breasts so they aren't big!

Take the chicken and put it in a oblong pan like a 9x11. Mix together a can of cream of mushroom soup and half a can of white wine or water if you don't like wine. Place slices of white cheese like provlone or jack on the chicken and then pour the soup/wine over it. Bake at 350 for about 45 minutes. Salt and pepper to taste...

Wrap them in bacon, pan fry until brown, add some garlic and mushrooms and a little white wine, cover and cook on low for 15 mins or til done. You'll find you have a tasty gravy in the pan too!
